Guitar: electric, acoustic? I may not be the best one to ask since I AM a guitarist, and haven't found samples that come close (at least to my ears) but some of the VSL horizon series sounds pretty cool as well as Quantum Leap Guitar & Bass by Nick Phoenix.
As far as organ, the Notre Dame de Budapest Pipe organ samples are pretty authentic and the organ found in EWQLSO Silver is pretty cool too.
I like the 88Key Rhodes found in Logic Pro.

You may want to check out the Bardstown Bosendorfer Imperial Grand Model 290 and also Franky's Yamaha C7.
For Guitars and Banjos you may want to check out the Vintage Jazz Guitars and Tenor Banjos from Bardstown Audio. Franky also has some great sampled guitars that you should also check out.
For classical guitar you should check out the Vienna Concert Guitar from VSL.

It took me a while too - it's near the top left, and near the bottom left - it's a little graphic - a dark colored oval with "post reply" on it. (If it was a snake...!)

BTW...
Depending upon what kind of percussion you're looking for, you might take a look at Yellow Tools Culture...
For drums, I've used BFD, dfh-Superior and Storm Drum, and you might check out Scarbee's Imperial Drums...
For bass, I'm not sure what kind of bass you're looking for, but you might also want to check out Scarbee for slap and/or fingered Jazz bass and Lastlibs for acoustic bass guitar...

For solo cello go with KHSS. You can buy the instruments separately, so it will cost you a ton less than going with VSL or EWQLSO. The variety of articulations allows one to do some very realistic solo lines.
For the Rhodes, I'd go with Scarbee. His electric pianos are definitely on my want list.

How much money are you planning on spending? You can find stuff for under a $1000 that will get decent results. Some of the libraries listed above when added up can get you to the $10,000 mark!
