A one stereo Mic like Rode Nt4 or two mono mics ???

I think it depends on your source. For some things (background ambience for example) a stereo Mic would be more useful. For other things (crashing metal for example) two mono mics may work better, because you'll then be able to set the gain individually to ensure that if one channel clips, the other will still be clean. Ideally you'd have both, but if you're just getting started, I think I'd probably go with two mono mics first.
